OCRE is the name that is typically applied to an earthy mineral consisting of hydrated iron oxide, which is often mixed with clay, and which is usually yellowish, orange or reddish. Ocher has traditionally been used as a pigment for artistic painting and for body painting, and its use dates back to prehistory. The ocher is a base color to give different tones to other colors. It is what we are looking for with our cuisine based on Mexican cuisine and from there branching out and exploring different styles, nationalities, flavors and aromas. A kitchen connected to the land, to Mexico and to our roots with local, natural and organic products. Our Chef Xavier Piero describes his cuisine as a French cuisine.
