Salsabor Prehispanic Delicatessen is a unique cultural space that teaches people Indigenous values thru food and art. Chef Alfonso Lopez De Anda, a Mexican proud of his Zapotec roots, specializes in New Indigenous Cuisine. He believes that you must "feel & taste the culture" before you can enjoy it. His signature dishes are Moles, The Tlayuda a type of Prehispanic Pizza, & many other Indigenous cuisine ranging from Mayan, Zapotec, Aztec, Otomi, Peru and many other regions from the Americas. Many of his dishes take 3 days to make, utilizing Indigenous methods like the comal, clay pots, molcajetes, mesquite wood, giving a warm rustic flavor to all his dishes. There is a comic book art gallery next door to the restaurant where you can enjoy San Miguel de Allende's 1st comic book called Niaj , run by international cartoon artist Isis Rodriguez who's the creator and his partner. Tours of his humble kitchen, catering, & classes on "Primal Cooking" are available by appointment on Mondays & Tuesdays from 10am to 4pm. Isis Rodriguez is available to meet in person, give tours of her works, & sign comics from 2pm to 6pm Thurs-Sat. Art classes in "The Anatomy of the Cartoon" can be done by appointment.
