If you come to Ajijic Mexico, next to Lake Chapala, one of the oldest and nicest cities, has a gringo bar called El Bar Co. Carlos Pantajo bought and old building and built his bar/restaurant and has been building, redesigning and recreating his bar/restaurant for the past 17 years. Everything you see is his creation and having built 11 restaurants myself, he has done an excellent job. A beautiful Mexican atmosphere. Ask to see his underground wine cellar in the courtyard, with an excellent selections of wines.Carlos, who’s hobby was/is cooking has an excellent menu for traditional International cuisine or sea food in a nice open air, patio restaurant. However, upfront he has an excellent sushi bar. So while you are mixing cuisine’s, you can enjoy 20 peso cervezas all day long while watching the game on a 50” TV’s.You have your choice of restaurant seating, bar seating with a full array of liquors and cervezas, lounge seating or patio seating. Monday nights, Barco is pack with local gringos enjoying the Monday night jam session. On Saturday nights, the Bryan James Band packs the house and never a cover charge.Carlos speaks fluent English and will gladly answer any question you have about the area. You can’t go wrong at El Bar Co when in Ajijic and "Bingo" the house dog will welcome you, so bring yours.
