Bienvenidos! Quinta Brava is an Authentic Oaxacan Culinary Farm. Join Chef Miguel Alvarez in his spacious outdoor kitchen & patio surrounded by large palms, mango, & guava trees. "Although I cooked in restaurants in Central America & Europe for 15 years, I love sharing the flavors of traditional Oaxacan food the most." -Chef Miguel. We welcome groups of 2-6 people to learn the secrets of Oaxacan traditional cuisine. Our classes are hands-on, starting with a market visit for the day`s fresh ingredients. Appetizers: Well knead fresh masa dough for empanadas, quesadillas, & tetelas with squash blossoms & mushrooms. Main: Mole Amarillo, Coloradito, Costillas en Salsa Verde(fried pork ribs with tomatillo mushroom sauce), OR mole Encacahuatado (peanut mole) with garlic rice. Dessert: Oaxacan ice Cream, fried plantains with condensed milk, lechecilla OR many more options. Our class will be 3-5 hours long. Class includes a beer & mezcal tasting. Buen provecho!
