Looking at the Yucatecan cuisine, it is rooted in Spain, and because of that the kitchen is very similar to some Spanish regions. However, in applying the Mayan spirit in each one, with its ingredients, tastes and trends, this culinary culture arises as a result of our miscegenation. This fusion cuisine was mainly in the convents, like "La Mision de Fray Diego" New Spain. The Arabs have in the tenth century and saffron rice to Spain. Five centuries later, in America we incorporate them to our style of cooking. Paella is the clearest example of this cultural amalgam that is the mixing, resulting in a combination of ingredients dishes and traditions of Spain, America and East. Now, the New Spain is "another Spain", and you would get to be judge and part to visit us and discover the magic of colors, smells and flavors that come together to eat in our land. This is the "other Spain", in the heart of Merida, where we hope you enjoy your food in the bright part of "The Convent", the Hotel La Mision de Fray Diego restaurant.
