What is ? Mashua An Andean tuber similar to the potato, mashua is mostly grown in the highlands of Peru and Bolivia at 4500 meters above sea level. The Incan emperors used mashua to feed their armies because of its high vitamin content which provided soldiers with abundant energy. More than 100 varieties of mashua have been identified based on germplasm collections in both Peru and Ecuador. The color of the mashua tuber is used to determine its many different varieties, such as Occe anu, Yana anu, Puca anu, Yurac anu, Ckello anu or Sapallu anu, Checche anu and Muru anu. Our purpose as a restaurant is to bring recognition to forgotten Andean products and to enrich our gastronomic culture through the dishes we prepare. We hope you enjoy this experience.
