The gastronomic proposal designed by Toshiro Konishi (1953-2016), the most influential itamae of Peruvian cuisine, focuses on two fundamental principles: on the one hand, the delicate selection and deep knowledge of each of the Peruvian inputs that are used (nobody knew our sea like Toshiro and nobody better prepared than the team he directed); on the other, the encounter between the technical skill required by traditional Japanese food and the creative freshness enjoyed by modern Western cuisine.
