I'm not Italian but I enjoy cooking in this style. I decided to open Osteria, because I want to create a friendly, relaxing place, without a restaurant's bustle. Together with the team we will cook in Italian style, but often using Polish, local products. We want to cook homemade food, but it does not mean folksy and like my idol Massimo Bottura we sometimes want to be a little bit extravagant in interpretation. Jacek Koprowski
