Zibrak insists that acquaintance with the menu without the wine accompaniment is a useless and foolish occupation. Thats because in SMARTWINE a wine list appeared first, and only then the dishes. The main menu was gathered from the notes on travelling around Michelin-starred restaurants all around the world. For example, Argentinian beef tartar is almost devoid of spices and served with a light mustard ice-cream it blooms up with Pino Noir. Oil seabass with fried potatoes and caper sauce plays with tints of taste with Chablis, and a simple risotto with saffron and spinach totally transforms in something different with a taste of Sauvignon Blanca.
