The pizza delivery restaurant Mario Pizzaldo was opened in Tyumen in December 2015. The concept was based on the high speed of delivery of orders. In order to make this possible, a professional technological approach was applied - the use of raw materials of a high degree of readiness, the construction of a production line on the principle of a conveyor, the creation of a high ergonomic kitchen, visual technological cards for cooks. The recipe for the pizza dough was derived by the method of experiments using mathematical calculations. Particular attention was paid to the quality of flour and water. For kneading dough we use special flour and spring water. For pizza filling it was decided to use only high quality ingredients - mozzarella cheese, Italian sauce, real pepperoni sausages, fresh vegetables.
