This snack reminded me of the fresh spring roll at Chat Thai in Sydney which is why I was really looking forward to it. It was fascinating to watch the skin being made as instead of pouring batter onto a hot plate, it’s actually done by pressing the elastic and wet dough onto a hot plate and then pulling it away, leaving a thin layer that adheres to the plate that then solidifies with the heat, amazing!Flavourwise, it was completely different to the Thai version which has salty, sour, sweet and spicy flavors. This Singaporean version is quite sweet and has textures of turnip, egg, peanut etc. A bit of chilli would have been nice too.
