All the products we offer in our restaurant we elaborate them at the Estate Santa Rosalia, alma mater of this project. Located in the municipality of Vizmalo, Burgos, Finca Santa Rosalia is a quiet and charming place where for more than 10 years, we breed our Wagyu animals carefully, and also we make our organic wines. All this under a philosophy of animal welfare and a deep respect for nature. All our meat comes from animals over 40 months old bred in the field with natural diet without antibiotics. Wagyu meat is one of the most appreciated and selected meats in the world. The degree of infiltration makes it a tender meat, very juicy and with a delicious taste, and is also a healthy meat because of its high content of unsaturated fatty acids such as omega 3, 6 and omega 9 oleic acid. At the Estate we also raise red partridges who receive a totally natural feeding, conveying meat and their eggs the benefits that entails.
