The "market cuisine" of this restaurant is based on a rigorous selection of the best raw material and its main source of inspiration in the rich culinary traditions of Segovia, without ignoring the contributions specific to the new cuisine. The menu offers a full range of courses, as the "Iberian Guijuelo", excellent red beef meat grilled as "Fillet of Beef" as well as traditional and typical roasted lamb, and roasted suckling pig - Segovia Style. Fresh fish is available like the "monkfish with fresh vegetables flavored with ginger" or "baked hake in dill sauce." Among the desserts a classic in the province: the "Ponche Segoviano." All these specialties can be served with wines that are produced in the fertile lands of Castile, as Rueda whites or reds of Ribera del Duero.
