INCA is the first and the oldest Peruvian gourmet restaurant in Madrid. It was founded in 1973 to offer a wide selection of Peruvian traditional food to the Spanish people. INCA restaurant started a new stage in 2004 with Irma Magalli Ferrari as head chef. Upon culinary training in Peru, Magalli introduced new traditional flavors from different regions of the Andean country, always using ingredients native to Peru.
