Gastronomy wise, we tried to be faithful to the Madrid's culinary tradition giving a touch of modernity, adapting our menu to new culinary trends and to most palates. And all this with the best products offered by the mountains that surround us, the Sierra de Guadarrama: meat with "denominacin de origen", organic products of the Madrid garden, and biodynamic wines that compose our cellar. Ultimately, a menu that respects the most demanding palates in a healthy way and takes care of our greatest asset, our natural environment.
