Chef Juan Carlos cuisine is inspired by the different cultures that have inhabited the Iberian landscape. This interplay of cultures, flavors, and ingridients inspires, and the Chef. With this starting point in mind, Chef Juan Carlos fuses traditional Spanish cuisine (specifically Andalusan from his home town) with new techniques, flavors, and approaches. He takes dishes that have long been forgotten and reimagines them giving the Spanish past a modern twist.
