Gumbo is the traditional soup of New Orlens, ex Spanish, French and British colony with a history of slavery, which is a fusion of European culinary traditions enriched with African flavours and new world ingredients. It is the one of the most important dishes of Creole cuisine, and one of the stars at Gumbo, a small Creole restaurant in the heart of Madrid located on the Calle Pez, 15, which also offers other favourites like fried green tomatoes, shrimp creole and blackened steak.
