Welcome to the Chalet de Gruyres L' avui le lathi de la Grevre k'on f l my fremdzo! or welcome to the Chalet de Gruyere, says the shepherd from Gruyere with a glow in his eye. He is proud of his origins, just as he is proud of the recipes he inherited from his father: that of the Gruyere cheese and the Fribourg Vacherin - two wonderful cheeses from the region whose reputation have gone way past our borders for decades. Every summer, the shepherds and their flocks go up to the high pastures of Gruyere for several months. The rough and tasty grass, mixed with the Alpine flora, gives the milk its particular flavor. In the evenings at the chalet, after they have milked the cows, the men with sun weather-beaten faces already know which flavors will prevail from the many hectares of wild flower meadows.
