The creation of Tritonis Cafe & Maltese Cuisine in Thailand. In the country, Alexander, the all- rounder creator passionate and always looking for new challenges, brought all his fascination and love for his motherland, Malta. Rising it all up by himself, from the main idea to the decor and menu, was born Tritonis Cafe & Maltese cuisine. The secret of its fast success, in only 8 months since it opened, is due to the simple and genuine cuisine that proposes, inspired from traditions of the island of Malta. One of the specialties of Tritonis Cafe is the pizza crust which is appreciated by the guests, especially for its dough which is prepared as a Focaccia type crust prepared since the times of the Carthaginians. Its delicate soft and light texture, while becoming crispy when cooked, and topped with home-made ingredients. And if the topping is home made cured bacon, no better word to describe it than yummy! So if you have made it so far by visiting us at Tritonis Cafe, prepare yourself's to immerse in the ocean's taste, because of course, in the kitchen of an islander and ocean lover. one cannot miss fresh and delicious seafood, that is transformed into a tasty sauce and used as a condiment for the pasta, pizza or any other related dishes. The main dishes in Malta vary but most popular on the island is the rabbit stew or deep fried rabbit in garlic and white wine. Bragioli (beef olives), Capponata salads and many others. However, fish such as octopus, calamari and fresh catch is the primary fish dish in Malta, which is eaten with home-made read, olive oil, salad & french fries. All the kitchen crew have been trained to execute all dishes the same way they are prepared in Malta, to make sure they maintain quality, consistency, flavor and presentation.
