In a nutshell, the Chef tries too hard and the staff is unapologetic. The venue is amazing, in an enviable location on The Palm, at the One and Only hotel. The interior design is elegant, modern and esthetically pleasing. The staff is attentive, or at least until you criticize the food.We ordered the Clam Risotto, the poached black cod and the octopus. The Clam risotto was over seasoned with salt, creating a sharp tingling on our tongue with every bite. The salt overpowered the rest of the seasoning, and unfortunately swallowed the flavor of the dish. The clams themselves were rubbery, as if boiled for too long.The cod was a hot mess. And that’s where the Chef tries too hard. The fish was dry and rubbery, because it was overcooked, but it was made worse by the fact that it was covere with an emulsion that created an odd and unpleasant mix of textures when taking a bite: a chewy piece of fish wrapped in foam. Typically, the outer part of the fish will try to have a crunchier texture than the fish, to make the fish feel softer. This was the opposite effect. The flavors were bland and dull, but were slightly enhanced by adding the vegetable mousse that was spread on the outer rim of the plate. When elements are meant to be mixed together to bring the full flavor of the fish, present it as such and make sure that the patron will have that perfect bite that combines all the elements.The octopus was simply overcooked and rubbery.We were offered macaroons at the end, but the biscuit was hard and crumbling when it should be soft and moelleux, the filling has the texture of meringue when it should be soft and creamy.Never did the staff try to make it right, despite our constructive criticism. Never did the Chef come around to enquire about our experience (the restaurant was not busy at all), and the staff made some questionable jokes. When I described how dry the cod was, the server responded with a smile “you know it’s dead already right?”, not grasping that it is a serious faux pas when I’ve spent so much money for food I could have prepared better.And that is the kicker. The prices at the place are very expensive, but the food never comes close to the quality such prices should entail.My friends and I are well travelled, and have been to amazing food places in the world. This was nowhere near the level of quality it should be. It may be unfair, but the saying ‘in the land of the blind, the one-eye is king’ comes to mind as, maybe, the regular patrons’ palate doesn’t know any better and will confuse the dishes at 101 for fine dining cuisine for not having had the chance to sample spectacular food elsewhere.Overall, a very, very disappointing dinner experience. So much so that I felt inclined to create a Zomato account to let other patrons know about it.Oh, the Pisco Sour was actually really great. My final advice would be to go there for a romantic evening drinking cocktails, but stay clear of the food.
Amazing location, very nice place. The service is really good partial improvement can be done. Our food was served late more than normal and we didn’t like the Pasta. Overall it is good to try this restaurant.
Top Notch!Dined here many times and never disappointed. High end dining so not cheap but well worth it. Spectacular food in amazing environment and top service. Thanks All for a memorable experience!
