    You can feel good about eating at Brigade as you are helping to fund a charity that provides apprenticeships to the homeless. The food is quite good too. Service is very warm and accomodating, if a little slow.Good acoustics but the room is very bright. It would have felt more intimate if bulbs were a little dimmer. Fascinating to see the open kitchen where they work with open fire, among other techniques. The room was a little chilly during our visit.We started by sharing smoked beef marrow on toasted focaccia. Toast was very crisp, marrow rich. There was beef dripping instead of butter on the toast. A star of the dish was the parsley salad which contained sweet shards of pickled shallots. Dressing was fantastic being quite bright and lemony but also quite sweet. There were some fried breadcrumbs for texture.For mains my companion had the excellent lamb shoulder dish. This was cooked over the open fire. They were magicians with this cut managing to serve it rare and tender. I’ve always braised or slow cooked this cut to death. Beautifully seasoned. I also tasted the acidic pickled shallot on this dish which I liked very much.My main was dull in comparison. Roast beef and watercress salad. When I complained that the dish needed a sauce the waiter suggested the blue cheese butter which is made accompany another dish. Big improvement but I wish I had ordered the terrific looking tiger prawns delivered to another table.Chips looked beautiful but I was not keen on the texture, being a bit flacid. My dining companion liked them though. A salad of roast beetroot, spinach, chickpea and orange was very good. Another great slightly sweet salad dressing.
