Trained at Ottolenghi in London amongst other highly acclaimed restaurants, Ruben has a nose for the new and a keenness to experiment, resulting in a spontaneous, exciting modern rustic menu, constantly changing and built around the best and most interesting ingredients that arrive on Nomada's chopping boards.
