I’ve been coming to tobiko several times a week for the past 6 months, and was seduced by the relative quality of the food for its price, given that decent sushis are really hard to find in the area.a few months ago, i came back to the shop to ask for an exchange, as some of my salmon sushi were made solely of the brown part of the fish, plus bits of external skin, which is not meant to be served in raw sushis. i couldn’t even chew on them.after 10 min of negotiations, they finally accepted to replaced the bad sushi rolls, but the chef was very arrogant and rude about it, saying he’s been making sushis for years and i was the one wrong to complain.today i went again and had a salmon don (raw salmon on top a bowl of rice), and realised later that half of the salmon had been fully cooked by the hot rice. i had already ordered this dish dozens of times before, and often the rice was steaming hot, when it’s meant to be served at room temperature or cold to avoid cooking the fish. this time the salmon had stayed too long on the rice and was not raw anymore.i went back and asked for a replacement. the girl at the counter offered to refund half of the dish, but i actually wanted to eat and have it replaced. the chef then recognised me from that previous time, told me i was not welcomed there anymore. i said i did want to keep going to tobiko, but he said i couldn’t take another step in their shop. he took the bowl of food and threw it away without looking at it and told me to get out. i took another bowl of rice from the shelf and left.it’s not acceptable for a restaurant to refuse to replace food that’s been screwed up. if i ordered a steak tartare and had a well-done steak instead, i would be sending it back.
