Without notice or the correct signage, Baban started adding yellow colouring and preservatives (egg powder) to their once perfect and simple fresh naan recipe of flour, water and oil (previously advertised).Last week, we noticed that the texture had changed (seemed more stale) as well as the colour, but put it down to the fact that their wonderful naan chef was on holiday (friendly, delightfully cheerful and talented man). I thought: bless them, they’re trying, and that’s what counts. A few days later I returned hoping to see my friend (still on holiday) and ordered again. By the time I’d got home, we were astounded to see that the naans were bright yellow. Tried one each, and they were quite tough, which was unusual.I called to ask if they had started adding yellow food colouring (I react badly to E102, tartrazine). The chap I spoke to demanded instead, to know if I’d prefered the flavour with their new ‘secret ingredient’ rather than just answer the question. The recipe (previously advertised) is now apparently state secret, which I find a bit alarming, as the contents of egg powder are so variable, I now have no idea what he is using now. At least with citric or ascorbic acid as a preservative, you know what you are getting.Eventually, I got to the bottom of it. They are adding this as a mould inhibitor, because their biggest customer (in the market) leaves their naans out, and they can now do so for three days!We visited Baban once or twice a week for 20 naans at a time. Their market customer buys 100 a day. They don’t need me, or my mummy friends trying to avoid additive nasties. It is only me that noticed.It is disappointing. I really enjoyed this place, and am sad to have to change my rating. More disappointing is that this change was done by stealth.
