Its the end of an era – in June, TFT will be moving base to Dubai. Soon, the days of trawling London for food will sadly be a thing of the past, and I am going to miss the place dearly. But dont worry, you hundreds of avid, dedicated readers, Ill continue to update from over there!In the month or so I have left, owing to sorting out small matters like U.A.E. bank accounts, visas and sorting my crap out at work, I will not be heading out that much, so Ill need to make every excursion count – i.e., the other day, I ended up at the Bourbon Bar at the JW Steakhouse, at Grosvenor House, a JW Marriott Hotel in London. Boasting over a hundred and sixty various different kinds of of Bourbons, and one bespoke blend of intense Jack Daniels whisky, this restaurant bar may not be a known cocktail destination in the same way Grosvenor Houses Red Bar is (thats a must-visit as well, by the way), but make no mistake about it, there are some serious drinks on the menu here. An old work colleague and I were only dropping in for a quick drink so I needed to choose one wisely. It turned out to be an easy choice. Faced with a immediate future without easy access to bacon (though I have been told that certain large supermarkets in Dubai have bacon rooms, where you can buy pig in a deliciously clandestine fashion) I opted for the Candied Bacon martini.Shaken bacon-infused Jack Daniels, Bramley and Gage plum liqueur, pomegranate, lemon juice and bitters, this was a fruity, smoky drink that had that moreish, salty aftertaste that could only be one thing – cured meat from the back or sides of a pig. I was very happy indeed. However, never underestimate the power of garnishes, as this lovely little beverage was crowned with a slice of candied bacon itself.I looked into how to make candied bacon and all you need are thick slices of the meat, a load of brown sugar and cinnamon to dust, and then you grill it to a crunchy, dangerously caramelised finish. I munched the garnish – smothered in amply syrup – with wild abandon. It made the drink, though never before has one slice of bacon made me feel so nauseous and never has drinking bacon been so good; just one of many reasons I am going to miss this city. mikejamesdalley.wixsite.com
