    We attended the half price soft launch. There were still a few glitches in the service that I am sure will get ironed out during their soft launch period. However, I don’t know if they will be able to fix the problems with the food.It’s a pleasant airy space with casual, friendly service. The menu reads well so we were really quite excited. While we waited for our order to arrive, we tasted the 5 bottles of sauces on the table on our palms. In particular the fruity pineapple and anchovy and nutty peanut and lemongrass were great.Our shared main of the carpaccio fold arrived first along with the aubergine caviar starter and we were suddenly disappointed. The carpaccio dish (14.50 at full price) was meant to be cooked in a pot of hot broth, but the broth wasn’t really hot enough to cook the meat. You could warm it through though. The beef had not been marinated and the broth, while tasty, wasn’t punchy enough to impart any flavor to the meat. The four little rice pancakes the dish came with were folded and really difficult to unfold without tearing. The way they serve this kind of dish on Kingsland Road (individual pancakes laid out flat between flexible mesh discs) is far superior. There was some rice vermicelli and pickled vegetables and some nice fresh herbs including perilla leaf. Besides the nice condiment bottles on the table there was really very little flavor.If you want a meaty rice paper wrapped dish, I would recommend Tay Do on Kingsland Rd if you don’t need date night ambiance. Their char grilled goat rice paper dish is much larger and tastier at 10. If you are looking for a place suitable for bringing a date try the pricier Table Griddle Ribeye at Viet Grill a few doors down at 7.50 per person.We were also disappointed by the aubergine caviar which was pretty devoid of flavor, except for the sprinkle of herbs on top. Severely under seasoned.Last to arrive was our starter of the panko sharing platter. Vegetarian summer rolls that had been dipped in panko and fried. Large portion. The rolls themselves would have been nice, but they were quite greasy from the frying. Again they needed a lot of the bottled sauces.Maybe the food is intended to be flavored primarily by the bottled sauces. Prior to the restaurant, Fold was a company that primarily catered for corporate lunches. Wondering if that business led them to breed out all of the punchy flavor in Vietnamese food.
