    This is now called Tony Singh at the Apex. I walk through the Grassmarket often and love the bright vivid branding of yellow, red and black outline of Tony with his bright red turban. I eventually made it in for lunch on day lured in by their lunchtime express menu but on perusal this just really didn’t tickle the tastebuds. Three courses for 9 is a bargain but starters is a mug of soup (lentil in our case); then a curry of the day, red thai mussels, or chickpea and potato curry with vanilla ice cream for dessert. We both agreed that 3 courses was maybe too much for lunch so decided to just order from the a la carte main course.The Haggis pakoras sounded delicious as did the Kalbi short ribs but we went for the Krispy Fried Chicken Sliders and the Coogate Burger.To be honest we could probably of had the 3 courses as the portions are small and there are no extras unless you order them.The Chicken Sliders I requested without the hot sauce and it came with hot sauce. Chicken pieces were tiny and well fried bordering on overdone.The Burger was nothing to write home about. The bacon wasn’t crispy and underdone. The pattie was thick but bland.All in all, if there is no where else to go, then go here.Service was good.     Festival Pop Ups are great because they allow you to taste foods we don’t always have the option of eating. I heard about Tony Singh’s Pop Up and knew that I needed to try it during the festival. Being street food, it’s a great place to go for a quick bite before a Fringe show. This is what we decided to do last night. For a Pop Up the menu is actually quite extensive. Me and Sam decided to share the curry of the day (pork and chickpea),haggis pakora and the flat iron steak. Everything just comes when it’s ready, which was perfect for us. The curry was delicious and was served with a selection of chutneys and rice. The haggis pakora were much bigger than I though, but also very tasty. The flat iron steak came out last and was cooked perfectly. We both like our steak quite rare, which was how this was cooked. The chimichurri sauce that the steak was served with complimented the steak perfectly. Normally I’m happy to eat from paper plates with plastic cutlery, as it adds the the street food vibe. However, I found it extremely hard to eat the steak with plastic cutlery! It is definitely worth giving Tony Singh’s a try whilst his Pop Up is still at the Apex International.

    Tony Singh has opened this new pop-up restaurant for a duration of the Fringe festival. Located conveniently in Apex Hotel on Grassmarket I was invited to come and taste his international street food with a twist. And gosh, I did loved it! The menu is simply divided into Meat, Fish, Veggie and Pudding. There are no starters or mains and the food comes as its ready and hot from the kitchen. There is so much choice on the menu so we really struggled with what to order. We decided to try something from each section. So we went for the haggis pakora and flat iron steak from the Meat, ceviche and crispy crab roll from Fish, steamed buns & pickles from Veggie and we finished with the slider for a dessert.The haggis pakora and steamed buns arrived first. The pakora was nice but personally it was my least favourite dish out of all as it was quite filling and heavy. However, the mint sauce that it came with was lovely and gave the dish a bit of fresh taste. On the other hand the steamed buns were light and as I’m from Easter Europe where we eat a lot of pickles I really enjoyed the pickles that the buns came with. There are also four sauces on the table from which you can choose from and for this dish I chose the very hot sauce which accompanied the buns and pickles just perfectly. The flat iron steak was lovely as well! Im a big carnivore and I love meat so I have to say that this chunk of beef was absolutely tasty! The Gauchos seasoning that came on the top of the steak was something new for me but very pleasing to the palate. However, my all time favourites were the ceviche and the crab roll. Both fresh and straight up to my taste! I loved the South American flavour of the ceviche coriander and lime is a perfect combination with a fish! It contained a lot of red onions though so if youre not a big fan dont order this. My companion tried to avoid them but it was impossible as there are too many. The crab roll comes with mango and is very well flavoured. The whole crab is in the bun which looks stunning and it tastes even better! I would definitely recommend this dish to all seafood lovers! We wanted to try one of the desserts so we went for the slider and it was a great choice. It comes as two big pieces of brownie with loads of ice cream and sauce on it. The monkey blood as Tony calls it is quite sourly so it accompanies the very chocolaty brownie well! The service was very nice and quick. The dishes were coming out from the kitchen very quickly so I would definitely recommend this place for anyone needing a quick lunch in the area. However, we didnt feel rushed or anything. The only thing I would say on a bit of negative side would be that as much as I understand that this is a street food pop-up, the fact that the food comes on plastic plates and you eat with plastic cutlery doesnt go that well with the overall Apex Hotel atmosphere. I think I would prefer to get a proper plate as sharing from the little plastic plates wasnt very convenient.To conclude, Tony definitely takes a contemporary culinary approach with this Fringe pop-up. The menu offers a great variety of dishes so everyone will be able to find his favourite taste from around the world. The food is fresh and very tasty but I would definitely recommend ordering at least two dishes per person as the plates are not that big. Getting a dessert is a good idea as well to finish this rather special street food meal with a twist. I havent been to a similar place in Edinburgh yet so I would definitely recommend this place if youre looking for something different.
