Dinner, which is by reservation only, is a five or eight course surprise tasting menu that will take guests on a sensory exploration of the different regions of Scotland. There is the option to have matched wines by the glass which Condita has shipped itself and these have not been seen in the UK before. The wines are from small scale producers who work organically or bio-dynamically. Dinner is cooked by Conor Toomey. Dishes are based on ingredients from around Scotland and these are organic where possible. The kitchen has call on a 19th century walled kitchen garden in the Scottish Borders that is growing produce for them. Just as dishes move with the seasons so too does the wine offering and even the dcor follows suit. The simple white backdrop of the restaurant is over-laid with dcor that changes seasonally, echoing the moods of the landscape outside. Condita has just six tables and offers a unique, very relaxed and intimate dining experience.
