The salsa and chips were nice, it had a slight spice to it, which I always like. The food overall was good, but not great. My chimichanga was closer to being a burrito, and the rice needed more flavor. Also, I asked for a side of cilantro, but I was told that they didn’t have any but that it was in the pico de gallo. Strange.
I started off with what was listed as a ‘Large’ Margacorona (more commonly called a Margarona). I was really disappointed and started to dread my food. It was basically frozen margarita mix sans Tequila with a Corona in it…super sweet and you find more alcohol content in a juice box for kids. Not to mention it was a size that usually passes for a small at most Mexican places in town. The good news?? When I asked for a beer the server looked at my full glass and asked if I didn’t like it and when I said no he actually took it away and said he would take it off my bill…something that rarely happens at Mexican places in my experience.Then came the food…it did NOT disappoint!!! Huevos Rancheros was spot on. Perfect amount of spice to the sauce over the eggs. If they could find a bartender who can make a good Rita this place would become a new favorite in town and would earn 5 stars. But trust me, skip the Rita’s and just order a beer.

What else do you need?We have been going here since they opened. Over the years we have tried virtually every other Mexican place in Huntsville. Coyote has always been our favorite and we go there regularly.
Very good place to eat. Great service and great food. The food had a good taste. A lot of food for a great price. The salsa was not the best but was good. Would definitely eat here again
Good Mexican Food in Huntsville. El Coyote is one of my favorite Mexican restaurants in the Huntsville area. The staff is very nice and provide great service. I love every meal I’ve had there.
Beer was good. Food not very diverse and the traditional stuff is covered with a goopy tomatoey sauce which I had to scrape off. Beans and rice ok.
Decent Mexican Resturant. Food is always pretty good and the atmosphere is nothing special. Great place for lunch. Service is iffy sometimes but overall I like the place.
