In Heaven. What is it about the Indian Bend area of Scottsdale Road area that would attract two excellent Japanese restaurants Roka Akor and ShinBay? ShinBay is different and BETTER – and reminded me more of walking down a Tokyo street and dashing in for a creative culinary adventure. We nearly ordered everything on the menu and were delighted at every turn, starting with house made tofu, through a perfectly seasoned and textured black cod, to fresh and thoughtful sushi, and finishing up with custard dessert styled from Okinawa. Every dish was something we had never seen prepared that way. Get the chef’s course OR do what we did – order a variety of dishes off the menu, which cost about $75 per person (with drinks) versus the $125 (or so) chef’s course that they recommend. Either way if you appreciate creative and fresh Japanese food, you will be in heaven.

We have been disappointed far too many times, so were cautiously optimistic about Shin Bay. We are thrilled to say that it blew our minds! The chef took our likes and dislikes into consideration creating a truly enjoyable experience from start to finish. Every course was masterfully prepared and presented – the attention to detail was beyond impressive. The food looked almost too good to eat! The excellent selection of japanese beers, including a japanese pale ale, and delicious chilled sake helped to elevate the meal. The service was also extraordinary – attentive but not overbearing. Our experience was so good we went back the next week to celebrate our anniversary! Yes, it is not cheap, but well worth it. Shin Bay is a gem to be found in the desert. We can’t wait to go back! 1. Chilled asparagus soup – a delicious and refreshing start to the meal that made us excited about the courses ahead. 2. Scorpionfish carpaccio – neither of us had ever tried this fish before – the fish itself was extremely flavorful and it was dressed with hot grape seed oil which lightly seared the fish and enhanced the flavor. 3. Sashimi sampler – six different, exquisite preparations of raw seafood – including a sashimi grade mediterranean style tuna tartare, clam with Japanese five spice, mackarel with ponzu sauce, scallops with freshly shaved black truffle, kumomoto oyster topped with uni and miso (rocked our world) and baby yellow tail. 4. Steamed manilla clams with 5 types of Japanese mushrooms, served in the most delicious broth. Japanese comfort food taken to a whole new level! 5. Nigiri sampler of five different incredibly fresh fish – each topped with it’s own specially paired sauce, paste or other delectable seasoning. It’s clear they fly their fish in fresh daily – you can taste the high quality in each bite. 6. Hot plate – wagyu beef, asparagus and enoki mushrooms served with a hot stone for us to cook it all on. This was a fun and unexpected surprise and when we saw the marbling on the beef we knew we were in for a treat. 7. Sushi sampler – the meat lovers version. This was another delicious surprise. We would never have expected to be served meat with rice in this way and now we can’t imagine how we’d gone so long without ever experiencing it. We enjoyed seared wagyu beef, duck, foie gras and sweet shrimp. 8. Japanese egg custard with fresh fruit – light, fluffy, not too sweet and the perfect end to a truly perfect and memorable meal. Yes, we were stuffed!
