All good delicious Southern Barbecue. My 10 year old grandson inhaled his pork sandwich as did I (I fudged a little and put some slaw on it) Wife loved her ribs. Okay potato salad, slaw had a good flavor but was a little dry. No diet coke though, not fond of diet Dr. Pepper, wife had water because she hates Pepsi. Grandson had the lemonade. Dcor was what I call old Southern Road House Rib Shack (home made signs, tin signs, etc.) very similar to Eddie’s Barbecue in Central Louisiana. All in all a great experience. Oh, we three split an enormous serving of peach cobbler (this cobbler had a cakelike top instead of the usual biscuit topping) it was sooooo good. Just needed a little tetch of vanilla ice cream.
When I’m near a legendary BBQ place I have to try it even if it’s obvious its glory days are well behind it. Such is the case here at Stubby’s. 5:30pm on Wednesday evening it was almost deserted. The first thing I see as we walk up to the counter is a pile of something black, it turns out to be racks of ribs. I have to do it, I judge BBQ by the ribs, sandwiches are just too easy. The ham looked good so I did a combo and got some of the beans after hearing the description of how they are prepared with ham on top and then placed in the smoker! The black ribs as expected were dry but still tender. The ham faired better, good flavor and not dried out. The beans were the biggest disappointment. I’m willing to bet back in the day they were great but they were drier than the ribs and unappetizing. As others have mentioned the sauce is sweet. I like KC style sauce but this wasn’t very good either. I’m sad for the place, you can tell it was an institution at one time. I’ve seen this before, Sonny Bryan’s in Dallas comes to mind, but this is more of a fall. Apparently at some point they didn’t train up a pit master to take over.

We could smell it as we drove by on the way to the hotel and knew where we were having dinner. It was empty when we came in for an early dinner which made us wonder if it was as good as it smelled. It was. The portions were good and the brisket, pork, ham, and ribs were all delicious, tender, and juicy. The baked beans were a perfect mix of sweet and smoke with big chunks of bacon. Don’t pass them by.
The secret to the delectable pot of beans is the marvelous balance between the smaller-than-average legumes, a thick and sweet sauce and smoke. The master bean pot sits at the bottom of the smoker, collecting not only hickory goodness but pork and beef fat drippings. At best, mediocre. No, less than. I asked for a pulled pork sandwich and what I received was chopped almost beyond recognition. Perhaps someone can tell me why some BBQ joints do this. The pork drys out and the sauce does not help. I also ordered slaw, chips and a drink for just under $13. Perhaps they are doing something right, but this isn’t it.
Great smoked chicken!!!! These guys know how to smoke it up!!!
