Today was my first time at Proof, and I loved it!! I’ve heard amazing things about their almond croissant and I wanted for get it but unfortunately I’m allergic to nuts, so I enjoyed the Orange-Chocolate tea cake instead. It was DELICIOUS, and paired perfectly with my soy cappuccino. Love the dark interior, but seating can be hard to come by so make sure to get there early if you’re planning on meeting someone so you can stake out a table inside! i can’t say enough good things about proof. the pastries are amazing – they make my favorite almond croissant. the croissants here are buttery and perfectly flaky, though slightly different because they actually use some sourdough starter in them. and in the early spring, they will do a run of pistachio croissants that are ridiculously good.they are really picky about the quality of their pastries too – i’ve been a regular for years and there will be days or even weeks where they won’t serve a specific pastry because it just didn’t come out right. the coffee program is run by cognescenti, which is always on point. the space is small though, so there aren’t many tables, and the line can get quite long on weekend mornings. jenn.la
Very delicious pastries and very good espresso! Very busy so seats are at a premium. Enjoyed the ambiance – there’s a very friendly atmosphere.
This reviews is ALL about the croissant. Their croissant is perfectly crispy, buttery, soft and chewy! When I studied abroad in Paris, I went to Ble Sucre every morning for their croissant. So happy that Proof bakery lived us to all the hype! Can’t wait to come back here every week 😉
