We were staying at the Legoland hotel with our kids. If you are staying there please do yourself a favour and drive to Carlsbad for dinner. It’s a 10 min drive and there are many more much better dinner options. The Land & Water Co is one you should seriously consider for dinner. The staff were great especially with our Lego ninja’s. They custom made some sushi for them. Make sure you get the beef skewers & the surf and turf. The flavours are delicate & balanced & the food very fresh. Please ignore the reviews of the staff being slow. It’s a beach side town & the service was perfectly paced.

There are few things as palpably exciting as watching art being conceived and executed for you, in front of you and as you gaze upon the process. As we sat at the sushi bar in front of Chef Rob Ruiz, proprietor of The Land and Water Company in Carlsbad, CA and uttered the magic words, Omakase, please, time seemed to slow for a heartbeat. His gaze turned into a thousand mile stare, body and mind temporarily displaced into another dimension, all energy focused inwardly for a second or three as he ruminated on the chain of food and events that was about to occur. As he returned to the here and now, he said, I was thinking about how Im going to do this.

Sat right at the sushi barFood was pretty good but big bald guy with scuff beard and no sense of humor lurked over us the entire mealThe only time he got talkative is after he gave us the bill!!As I sat with my wife and daughter two young men came in that were obviously friends with the sishi chefsThey fired f bombs continuously as soon as they sat down and throughout the rest of our mealAfter being asked for ID my daughter overheard the waiter that asked for them ask another man (presumably the manager) if they would accept their obviously fake ID’sWhen asked their names they couldn’t even match the namesVery annoying, food wasn’t terrible but won’t be back!
Water Roll. Octopus, salmon, maguro, perfectly seasoned.
Delicious. Really good food. the service was a little slow at first but they picked up the slack pretty quickly and made up for it.
