Sustainable and delectable. I was excited to hear that there might be a good new sushi place in Chico. I had not heard of the concept of sustainable sushi before, but the idea seemed like an added bonus. They use alternative fish varieties that are similar to poplular sushi staples, like yellowfin, but are not being overfished the way that those are. The owner gave us a sample of kampachi, which was a very tasty fish. The rolls are mostly named after Chico streets and highways, and many of them are completely unique to anything I have tried at any of the dozens of sushi restaraunts I have been to over the years. We tried the Chestnut roll, the Skyway roll, and the I-5 roll. They were all yummy, and the vegan I-5 roll was one of the most interesting and original rolls I have ever had. I will recommend and return.
