    UFC (dish review). UFC — The UFC, or Ultimate Fried Chicken, is Eat on Monday’s signature nom. It consists of a slab of fried chicken (hence the name), fresh lettuce and tomato, bacon, and pepper mayonnaise in between a delicious ACME roll. Each piece of meat comes breaded (panko style), not necessarily fried (to save time, I assume). Though delicious, it is borderline overcooked, with the breading slightly burned around the edges. Miraculously, the chicken is still juicy and easy to eat (boneless, skinless breast meat). The pepper mayo adds a welcome kick to each bite, helping the sandwich avoid being one dimensional. At $10, it is expensive and fairly small portion wise, but just tasty enough to be enticing regardless.26 Jul, 2014Eat On Monday (American/Organic). Eat on Monday is one of the few remaining trucks that manages to consistently capture my attention and patronage. This light blue van of street cuisine serves up some of the best sandwiches of any vendor in the South Bay. Most notable is the UFC, a Fried Chicken club topped with bacon and veggies. The dish is a huge fan favorite, and has won the acclaim of many food truck followers. Other entrees include the Bleu, a cheeseburger with Bleu Cheese layered on top, the Pulled Pork Sandwich (self explanatory), and the Chipotle Cheeseburger (equally self explanatory). Though all are expensive, they are worth it; each comes on a fresh baked ACME bread roll and most of the ingredients are organic or local.
