While this is not a critique of the BarBQue, we all enjoyed great salads tonight topped with our choice of meat. Grandma and I had the smoked beef on our salad, and momma had the smoked turkey on hers. I can say that each was a prefect match for the salad. I was pleasantly surprised to find the Spicey Ranch dressing was actually spicey!

More BAD BBQ in Colorado…. Does pretty big business and the people seem nice. But C’mon….it should be so much better.Tiny, overcooked ribs that fall off the bone the way that people that don’t understand good BBQ think ribs are supposed to be…the brisket is terrible…the sides are bland…the only thing I like about it is the fried okra because it takes me back. Damnit Colorado, you should have better BBQ than this.
Yum!. If I could eat ribs and beef brisket every day, without having a heart attack before i turn 40, Rib City would be heaven. Good food, friendly staff, sometimes a little slow when it is really busy. I prefer St Louis Style ribs, and theirs are amazing, without the inch of fat on the top like some places.
Different ain’t always good. How do determine quality? How do we measure the difference between good and great? This question is one of the things that makes BBQ so delightful and enjoyable to eat. With a little knowledge and experience anyone can become BBQ knowledgeable. Using taste and flavor alone, Rib City is pretty good. The flavor was good and most of the dishes were pleasant. Use degree of cooked wellness and Rib City slips a few notches. The ribs were fall of the bone done with no help at all, a little over cooked. They were covered in the house sauce, a sweet. sticky and flavorful blend but I never got the sence of good smoke flavor. The chicken was cooked dry and hard. She was one tough ole hen. Their choice to serve the brisket and pork sliced deli sandwich thin style spoiled the joy of the texture of good BBQ meets. No bark, no of sense how well done the meet was and not good for holding just a little sauce. The sides were generic and unoriginal. If you can’t find ripe red delicious tomatoes in December, take them off the menu. Charging custmers for a sliced hard, part green and flavorless tomato shows no attention to detail and a lack of respect for the diners.Did it taste good? Ya, most of it did. Was the quality of the BBQ good? No, not really. We won’t be back.
Southern Style BBQ done right. There is only two complaints I can levy against this restaurant: first, that their are not more of them; and second is that the one closest to me is a fair schlep (about 20 minutes away). But for ribs this good, you need to drive.For those of you that think that backyard grill is a barbecue, this place may not be for you. But if you have ever had real, Memphis style barbecue, this is the closest thing to heaven in Denver.They offer other items, and people tell me that they are great, but I go for the ribs. Full slab (often the slab and a half) of baby back ribs, with just the right touch of barbecue sauce, placed in the barbecue for 4 hours and cooked slowly. It says right on their menu, if you need a knife to get these ribs apart, they are free… don’t plan on collecting. These ribs are so good, the practically jump off the bone to satisfy your hunger.The ribs come served with two sides. For the second side order what you will (I usually order the cole slaw, with is very, very good). But for your first side, order the beans. As hard as it is to say, they may be even better than the ribs. The meal also comes with a thick garlic toast (kinda like a Texas toast, if you will). We often order a side of extra toast, and their is none left when we leave, it too is quite popular.If you have gotten though your meal, and are still wondering if this place is truly southern, or just a really good imitation southern, its time for desert. They make a key lime pie and (even better) pecan pie that will definitely show their Florida roots. Both pies are worth the trip alone.The bottom line is this… Bring an appetite, two if you can, and you will be rewarded with a southern barbecue as you can normally only get in the deep south. Enjoy!
