We loved this place. The restaurant sits on the second floor surrounded by magnificent pine trees. The food was fantastic. We had the hummus and tapenade appetizer, squash soup, roasted beet salad, chicken stir fry, and chicken sandwich. Would eat there again in a second. And we loved the book store too.

Fabulous Dining Experience!. My wife and I were vacationing in Aspen hoping to find some restaurants that might be organic or health conscious. The pickings were almost non existent! There was one small coffee shop that served free range chicken with some organic greens for salads, but most of the restaurants were fairly main stream, serving factory beef and GMO food with an expensive price tag! No Thanks! Then we found the Pyramid Bistro. We loved it! It was classy without being pretentious. We had wonderful service, great wine and a fabulous dining experience. It was organic, health conscious and delicious! The restaurant was contemporary yet warm and inviting! We found it on the last day we were in town. It will definitely be on our list when we return as we love biking and hiking and shopping in Aspen in the summers.
Delicious, beautiful, and serves vegan and gluten-free options!. My husband and I traveled to Aspen to celebrate our wedding anniversary and thankfully discovered this absolute gem of a restaurant. It is perched on the upper level of a bookstore with views of the treetops out of the windows. We are vegan and I must limit my food to gluten-free options. This was no problem here, and we stuffed ourselves with wonderfully prepared organic food. We started with the vegetable spring rolls and potstickers, then had crispy flaxseed gnocchi and a truffled mushroom gallette. These were all so delicious and unique we moved on to dessert with the chocolate tart and creme brle, all of these were gluten-free and vegan. i was in heaven! We could share everything. The staff were absolutely wonderful and it was obvious that they take great pride in their culinary creations. Thank you Pyramid Bistro for a wonderful night. I believe you will inspire other chefs in the area to add vegan and gluten-free options to their menus.
Very nice. We had an awesome experience, the food is high quality and the service is great. The ambience is great. We enjoyed a great meal. If you want to enjoy some good food, this is the right place. It is located in a bookstore on the 2nd floor. The deck has a tree in the middle, almost like a tree house. It is beautiful.
