Tatanka Western Bistro is a modern take on a traditional Old West saloon, elevated for Aspen. Our menus and design are elegant yet informal, simple and warm with interesting textures and unexpected touches. Offering breakfast, lunch and dinner daily. Inspired by the culinary traditions of Santa Fe, Oaxaca, and Mexico City, we have fused traditional bistro offerings with the flavors of the Southwest to present a truly TATANKA take on dining. To compliment our cuisine, we have curated a wonderful wine list and creative cocktail program to wet your whistle. We are Local, sustainable and committed to ethical production and transparency. Our menu is as diverse as the West, and we strive to truly provide something for every palate, as well as a welcoming atmosphere for all to enjoy.
