Best. Brunch. Ever.I was a little surprised to discover that Aji offers brunch on the weekends; a Latin American steak house normally doesn’t scream 10 a.m waffles to me. Sure enough, though, they make the best stuffed waffles I’ve ever had. They have a great mixture of Latin American and traditional brunch options, and their coffee is second to none. The best part, though, is that no one knows that they offer brunch, so they’re the only place in town that is virtually empty at 11 a.m on a Saturday.
Full disclosure: I’ve never actually eaten a dinner here. I’ve only ever been for their weekend brunch, and let me tell you: this is THE hidden gem of Boulder’s busy brunch scene. Everything is absolutely delicious (I typically get the bistec y huevos, and my roommate always gets either the french toast or the breakfast burrito), and everything is incredibly affordable. The best part? You might wait for up to two hours at some places in Boulder, but there’s NEVER been a wait when I come to Aji for their brunch. Yes. One thousand times yes.
