Always, when in Dillon. Our family vacations in Keystone once a year and the first place we MUST go to is Chimayo for the fish tacos! The fish is fried til crispy and served on a corn tortilla with pico de gallo, fresh cilantro, cabbage, and awesome sauce. A great deal for a family of 6.
Fresh & Friendly!. Chimayo is easily one of my favorite restaurants in Dillon. The ingredients are fresh, and there is something for everyone on the menu. For the quality, the prices are about right; stop in for their lunch special if you’re looking for a good deal!
