I grew up in Utah, so Cafe Rio was a HUGE part of my childhood. We didn’t have Chipotle or Qdoba, but we had plenty of Cafe Rio’s, so it was a weekly ritual for my Dad and I to pick up salad bowls and quesadillas for the whole family. Needless to say, I have a deep, sentimental attachment to this restaurant. However, once I grew up and moved to Colorado, I discovered the aforementioned fast casual Mexican restaurants, and transitioned away from Cafe Rio’s chicken quesadillas to Chipotle’s carnitas tacos. As good as Cafe Rio is, it isn’t my favorite casual Mexican dining experience, so I generally opt for another restaurant instead. If I’m in the mood to get in touch with my inner child, though, Cafe Rio is always my first choice.

So yummy. Seriously. Try the barbacoa.
