As a PT local resident, I really appreciate having a fine dining experience up in the foothills. If you are a Foodie, you will appreciate it. Grant it is a little pricey, but the menu is sustainable and friendly for many diet restrictions. You can be naughty or nice – either way the food is delicious!
I have eaten at Bistro Colorado twice in the past 5 days. Lunch, I split the 1/2 lb Bico Butger; so yummy. Today I had the cave omelet with mushrooms and a local cheddar and it was delicious. Coffee was so good and often refilled and the sourdough toast was really nice. Our waiter was a very sweet and attentive young man and added to our very lovely brunch.
