This is an unassuming spot not too far from Denver’s Little Saigon. It is not built for the hip Denver palate, and instead opts to present a bear bones and traditional Vietnamese menu, which is perfect if you are simply craving a good bowl of Pho.For this visit I kept it simple and ordered a bowl of Pho with rare steak and a Vietnamese Iced Coffee in order to get a solid baseline of what this restaurant had to offer. Pho has become the most popular Vietnamese dish in Denver, and gives us a generalized representation of Vietnamese cuisine and culture, which carries a lot of French influence. Pho itself is rumored to have stemmed from a French stew called ‘Pot au Feu’. Vietnamese Iced Coffee also carries with it that same French influence, as the French introduced coffee to Vietnam in the 19th century, and Vietnam now accounts for the approximately 20 percent of the world’s coffee production.The bowl of Pho itself comes with a decent portion of rice noodles, but a small portion of steak. The thinly cut steak actually continues to cook as you eat and releases its flavor into the stew, making for a delicious end to your meal. The bowl of Pho is accompanied by a plate of fresh bean sprouts, lemon, basil, and slices of raw jalapeo. These ingredients cool down the steaming hot stew, while also releasing their flavor, making for a dynamic experience. The flavor of your stew actually changes as you eat, and it isn’t until you get about half way through with your meal that it reaches its peak. This dish is perfect to warm you up in a cold Winter day, but also refreshing on a hot Summer day as the raw vegetables and basil give the hot stew a very fresh touch. This simple dish was very naturally flavorful, did not try to be pretentious, and left me feeling satisfied and full.By the time I had finished my bowl of Pho, my espresso had finished brewing. You are given a glass of ice, and on the side a glass with sweetened condensed milk and a small metal French drip filter (the espresso drips onto the sweetened condensed milk). The final product was too dark and thick for my liking (this does not apply to my taste in women) and I would not order it here again.Including the tip, I payed $15.88, which is not bad considering that I was full for the rest of the day (and I can eat a lot). I would recommend this place for anyone looking for a casual and traditional bowl of Pho and does not want to deal with service delay or crowds. Although I am sure there are plenty of other spots in Denver that can satisfy this craving, you can’t go wrong with Pho 2 Love (if you can get past the terrible name) if you are in the West Colfax neighborhood that is making efforts to revitalize.
