Best Mexican food in Longmont. Would highly recommend taco platter. The shells are lighter and tastier than the ones in the combos. Since Elia’s closed Mariposa is now your best place for rellenos. Great fajitas, too. You can also get black beans here if lard-filled rectors is not your thing. For healthier, but still tasty get the enchiladas espinacas.
