The self-serve salad bar is an exciting way to decorate your meal with the BEST cucumber salad, hummus, tahini and many other salad toppings. After living in Israel and eating the best middle eastern style food in the world, I love coming to Sababa and enjoying the flavors and comfort of Israel without leaving Gainesville!

    Messy Compliments To The Chef. Im a mess; I mean a big food-covered mess. On a normal day, I would likely be mortified by the hummus smudged on my blue pants (too bad theyre not tanthen it would blend in) and the remnants of Israeli salad sticking to my shirt. I would probably also be embarrassed by the ravenously -hungry wild animal-like behavior I displayed as I scarfed down a Falafel sandwich from Sababa UF as I left the downtown Farmers Market. But Im not. You see, the thing is I wasnt even hungry as I was strolling through the market today. To look at me you might surmise that I am relatively poised, healthy individual who follows the conventional manners of society. All of that melted away with the crispy, hot falafels simmering in the fryer. The smell of chick peas combined with spices sizzling in heavenly oil made me feel more like a begging dog at feeding time than a composed. , civilized human being. As I waited for the little pita pocket of pleasure to merge with the hummus, Falafel, and Israeli salad (a mixture of fresh tomatoes and cucumbers etc.), I recalled the pure euphoria I experienced some eight years ago as I ate a Falafel Sandwich from a modest little eatery off a side street in Jerusalem. My taste buds declared that the food must be one of the reasons Israel is considered the Holy Land. My appetite was ignited from the memory and I could hardly contain myself! When the lady handed me the sandwich (Finally, that was the longest two minutes of my life!) I resisted the urge to snatch it from her hand and consume it like an anteater. No, I politely took it, my eyes shining with anticipation, and made it the long five feet walk to my car. It was there, in my car, that I began to devour the pita sandwich, a symphony of flavors exploding with each bite. Slightly aware that there were people watching my out-of-control behavior, I put my car in reverse. (All the while eatingbut I was careful, I promise) By the time I made it the twenty feet to the red light, the food was gone and I was a fat and happy mess. I am still covered with the remnants of my divine dining experience. I have regained my composure, yet not my excitement; Sababa UF will be at the downtown Farmers Market every Wednesday AND they have a little establishment at Hillel, a large building just across from the University of Florida, featuring several Middle Eastern dishes! In conclusion, for only $6 I had an amazing meal full of flavor. All I can say is, Sababa (cool)!
