Pok (pronounced PO-kay), means to slice or cut. This unique culinary style was created by early Hawaiians and is still a mainstay in Hawaii today. Pok began with fishermen seasoning the cut-offs from their catch to serve as a snack. They tossed sliced fresh raw fish with Hawaiian salt, seaweed and Kukui nuts in a bowl with a soy sauce, green onions, and sesame oil. Traditional Pok seasonings have been heavily influenced by Japanese and other Asian cuisines. Pok has always been a mainstay for surfers, providing fast, energy packed delicious fuel.
