My girlfriend and I went here for our 9 year anniversary and we were very pleasantly surprised…and that is a massive understatement. This was a dining experience unlike anything we have had in Des Moines. The atmosphere was incredible. My girlfriend and I are fairly adventurous when it comes to food, so our server, Jeremiah, offered to take control of our dining experience and serve us what he considered to be the best dishes Proof had to offer. It was wonderful. The artichoke and prosciutto appetizer was absolutely divine. The artichoke had a perfect amount of char on it that paired so well with the prosciutto. He then brought a cheese plate with the in-house made crackers and a rhubarb jam. The cheeses were so funky and ripe in flavor that they were the perfect chasers for appetizer. He then brought out the beef marrow bones. If you visit Proof without trying the marrow bones, you have utterly failed as a foodie. They are fantastic. I also highly recommend trying the Spanish Ribeye. The seasonings on the steak paired with the 3 infused dipping oils was amazing. The single best steak I have ever eaten and I am comparing that to the Beef Wellington at Gordon Ramsay’s. The whole meal was fantastic beginning to end. I highly recommend this if you are looking for an outside-the-box dining experience. We shall return…and soon !!!
Anniversary dinner. My wife and I went to proof this last weekend for dinner. It was awesome! I had the 5 course tasting meal and wine pairing. My wife had the 3 course with wine pairing. After looking at some of the reviews of people complaining of portions I really had to step up. Sure, you could go somewhere and get more food, but it wouldn’t be of the same high quality. These guys really know how to use ingredients to make a food symphony. They only use the good stuff. I will say that both my wife and I were full after leaving. It was pure satisfaction. We will be back!
New Favorite. We had dinner at Proof last Saturday night and it was one of the best meals Ive had in Des Moines. We did not have reservations, but were seated right away. The atmosphere is great, with lots of windows overlooking the street, and very comfortable. The service was excellent – friendly, knowledgeable, and attentive but not intrusive. The food is where Proof really shines. The roasted marrow appetizer, served with a parsley and caper salad, red onion jam, and crusty bread was rich and creamy and oh so good. The beet salad, with housemade passion fruit marshmallows and blood oranges was creative and also yummy. For my entree I had the scallops and pork belly. The scallops were expertly cooked, as was the pork belly. They were served in a creamy broth that was the perfect compliment to the scallops and pork. My date had the best entree of the evening though, the sumac and black pepper pork. He was nice enough to give me several bites of this and it was the best pork dish I have ever had anywhere. It was moist and absolutely delicious. We ended the evening with the pumpkin cake which was also very good. I thought the portion sizes were just right and the prices very reasonable for this type of restaurant. Youre not going to get chain-size portions here. Proof emphasizes quality, creativity, and flavor in their food and the results are fantastic.I highly recommend Proof and we will definitely be returning in the near future.
Best lunch in Des Moines! The staff was amazing, especially the chef Chris. He came out and helped me choose my dosh, the gyro was fantastic! Thanks Chris!!
Awesome!!! From the appetizer to the desert a great dinner with a very attentive wait staff. If you have not tired Proof recently you need to come in. Will be coming back soon and often!!
Have not been to Proof since the new openers took over. Very disappointed. When we walked in anud were told to wait because food was being served. Then we were approached by someone else who was copping an attitude. Our drink orders were taken and others who walked in after us were being served first, over 10 minutes later we were served our wine.Won’t be back and will tell all our friends.Took 45 minutes to get our meal and then it was served cold.
Falafel to Die For. Pan seared falafel hand sandwich with the feta tabbouleh salad was one of the best lunches I can recall! Couldn’t ask for more balanced flavor with a kick of heat from the harrisa aioli and a loved the salad with a touch of curry to compliment. I am coming back to check out the dinner experience.
