  Really great. Worth your time & $$.. The approach here is to provide diners with a choice from among a variety of stewed meat fillings, which can be incorporated into combo plates, burritos, or tacos. The quality of the seasoning and preparation is evident: the green chile pork, the almond chicken, the chipotle pork, the stewed brisket–all these are savory, complex, and top-notch. They’re a better bet than the more traditional offerings of Carne Asada and Al Pastor which also are are on the menu. The proprietors, a friendly family of Mexican-Americans, encourage sampling from among the different options, and their pride in their food is apparent. On both occasions I have dined at Pimiento, once dine-in and once takeout, the food and quality of service both were excellent. Fish tacos are not to be missed, and the horchata has a respectable undercurrent of spice.Burritos are probably the best deal, at $5.99. Combo plates are good, but somewhat less filling. Location is a bit awkward. But given its relatively late hours and easy access (Murdoch and Waco), I think Pimiento has the potential to become a staple downtown/Riverside dining destination. It’s as good as any other Mexican food in Wichita, and considerably better than most.
