Tripoli Bakery. Ah… New locations!! I am working near Boston and went to check out tripoli bakery with the help of my rental car. The bakery side looked too tempting but I went over to the pizza area where I observed their pizza making process.1. Spread out risen dough on rectangular pan after using a rolling pin to flatten. Let sit with corners over edge2. push the dough up to edges of pan3. brush with sauce4. bake with just sauce and5. top hot sauce with cheese ad reheat to melt6. Serve!It looked like they precut the slices as well before serving.After burning the roof of my mouth (whoops)… I enjoyed a bite of pizza. Not really my fave as I thought the sauce was a little sweet for my liking and the crust wasnt full of flavor. But it was a great experience nonetheless.
I won’t be back to Tripolis.. Tripoli’s has two sections, a pizza bakery and a traditional bakery. The sweet side has okay stuff, though you won’t find high quality ingredients and fillings. I’ve only had a calzone on the pizza side and it was nasty. The spinach is cooked down to a grayish gummy paste, the cheese is low quality and tasted sour and the crust has an unpleasant texture and taste – I threw it out. The pizza slices are sicilian style and the cheese is lace thin. The building is industrial and ugly with a couple of stools to sit on. Service on the sweet side is friendly, not so on the pizza side.
Excellent!. The pizza here is like no other! The pizza is thin and cut into squares (I know people have preferences about their pizza, even how it’s cut). The sauce is sweet and they usually go light on the cheese, but you can order extra cheese. The pizza melts in your mouth. The bakery side of Tripoli’s is just as good! My personal favorite is the double layer vanilla cake with strawberry frosting in the middle. The bakery is always well-stocked and fresh!
