This is a really fun build-it-yourself ramen bar where you can make soup, noodle, or salad bowls with a variety of fresh and locally sourced ingredients.On my first pass, I went for an assortment of the usual ramen veg. fare (bok choy, carrots, edamame, shiitake) over a bed of their tender, chewy noodles, topped with pulled pork and mushroom miso broth. The broth is fantastic and easily stands alone, but they have an assortment of additions and mix-ins, like soy, chili oil, butter, etc. The pork flavor got a little lost in the broth, so I’m hoping they add more grilled type protein options in the future.Fantastic start, just a few weeks in. Can’t wait to go again and try more combinations!
